Probably the best editor I've seen is SlickEdit's outstanding Visual SlickEdit. It's a complete editing environment that has real Intellisense, code coloring, macros, excellent project support and integration with any build and version control systems you could imagine. Specifically for Java development, it's also got a built-in Java debugger so you can edit and debug out of the same environment!
