If you check the exam objectives for 70-210 at http://www.microsoft.com/learning/exams/70-210.asp you'll notice several elements (remote installation, EFS, security policy, etc.) that will require some knowledge of Windows 2000 Server as well as Windows 2000 Professional. AFAIK, Windows Server 2003 (or Windows 2000) MCP exams currently have no time limits imposed, but with new desktop and server OSes due in 2006/2007, that will probably change in the next three years. That still leaves a pretty big window to finish 2000 stuff, then take the two 2003 upgrade exams for MCSE (70-292 and 70-296).
