How can I see what files are open and being used on a Win2k server?

On a Windows 2000 server, how can one get a listing of what files are open and being used? If disk space is going down, I want to find the file(s) that are growing quickly.
Right-click on My Computer, select Manage and look in Shared Folders/Open Files. This allows you to see what files have currently been opened by non-local users.
