How do I restore my hard disk back to FAT?

I recently converted my hard disk to NTFS. How do I restore my hard disk back to FAT? I'm afraid that all data will be erased.
There are a few possible approaches. One is to back up all the data on the partition and reformat it as FAT. Another is to use a program like BootIt -- http://terabyteunlimited.com/bootitng.html -- to convert the partition non-destructively.
